I cannot imagine. I was a fussy eater then a vegetarian for so long, I was a nightmare! (Sorry Jeff). You are a saint to manage multiple people.

My Mum does that too, she freezes grated parmigiano, it lasts longer!

No not at all. It's frozen shredded mozzarella. I buy it fresh and freeze it myself. In this type of dish, where the cheese is melted, it won't matter. I wouldn't use frozen mozzarella on a fresh fish though, like a salad or something. It's really more about the texture. I keep it in the freezer for lasagna mainly.

Wondrous too, I never thought to freeze mozzarella, instead leaving floating remnants dying a slow stinky death in a clouded jam jar. Could you perhaps set your good sights on writing a cookbook for us?

Great idea! I've suggested she write "Sicilian Feast" for a very very very long time! Maybe now someone else is suggesting it, the book might eventuate :)
